Most recipes for beef short ribs are braised and take quite a bit of time in the oven. This one is real simple and relatively quick.
As always, each skillet and range is different, so all times are approximate. Use a good thermometer to check internal temps.
Ingredients
- Beef Short ribs
- Onion – Chopped
- Celery – cut 2″ lengths
- Fresh Spinach – use baby & no chopping necessary
Process
- Heat your Cast Iron Skillet to Medium-high
- Generously season all sides with Salt & Pepper
- Put the short ribs into your skillet – pre-heated to medium-high
- As you see them cook, turn the ribs to each side. I used about 4-5 minutes each side, but then I had to do bit extra to get the interior up to temp (~135-140).
- When done, put ribs on platter and cover with foil to rest for ~10 minutes.
Then
- Add onion, celery to hot skillet (a bit of oil may be needed)
- Saute for 4-5 minutes (or until mostly done)
- Add spinach & cover
- It should be ready just about when the ribs are done resting
